My Delicious and Simple Mushroom Curry with White Rice

Hello again kids with another recipe post!

I truly love cooking for myself, but sometimes, I really don’t feel bothered… I get really lazy, especially when it’s final times. When it gets difficult, I sometimes even forget to eat proper meals for myself, and wouldn’t have any groceries (my fridge would be really empty sometimes, and so would my wallet!). I start to overeat ramen noodles, fast food sandwiches, pizza, basically all of the least nutritious things that help with energy and overall health in general. So I sort of developed a few recipes that are really quick (under 30 minutes maximum), healthy-ish, and most importantly that taste great and give your mind and soul a break from your hard work.

Alright, so today I’m going show you my Mushroom Curry with White Sticky rice recipe! 

You’ll need:

  • Mushrooms
  • Parsley
  • Spring onions 
  • Chili sauce
  • Soy sauce
  • Peanut butter 
  • Spices: I used cayenne, garlic powder and herbs 
  • Sticky rice (or normal white rice works too) 
  • Eggs (optional)
  • Good music (because this cooking time is also about giving yourself a break)
So first chop all of your veggies to make your cooking easier. I barely had anything in my fridge, but if you think you could add more veggies, feel free!
I made my sauce by mixing leftover chili sauce from a crab stew (but you could use any type of hot sauce). Mix it with peanut butter, soy sauce, and spices of your choice! ( I used cayenne pepper, garlic powder and herbs). You can add pepper as well but DON’T ADD SALT, because soy sauce already has too much sodium. 
I boiled my rice for ten to 15 minutes, then let it simmer for 5 (because it’s sticky rice), and then I took the cooked rice out and added oil to my pot. 
I added a part of my onions, let them sizzle for a while, and then added my mushrooms and the sauce, and let them all cook for a while for 5 minutes (until the mushrooms are tender). 
When the mushrooms were ready, I poured it onto the bowl, and then fried an egg to put it on top of it! 
I finished by sprinkling some parsley for some greenery, and voila! 
It tasted as wonderful as it looks.
